Oatmeal & Yogurt Pancakes

This Oatmeal & Yogurt Pancake recipe is one that I combined ideas from Oatmeal Pancakes from the Biggest Loser and Russian Olaydi ~ Yogurt Pancakes.
Each have their own yummy unique ingredients. The Biggest Loser’s Oatmeal Pancakes included cottage cheese, but I preferred using greek yogurt. The Yogurt Pancakes didn’t have the oats, so I wanted to add some in and thought of combining the two recipes.
You definitely need the sugar and cinnamon in these pancakes. These are not your typical Sunday morning pancakes. These are that healthy kind of pancake and may seem a little bland at first. I added some blueberries on top of this batch along with some syrup and they were scrumptious. Of course, as I was eating them, I thought how a blueberry compote would have been perfect topping for this breakfast treat. Mmm…there’s always next time!
Ingredients:
- 6 egg whites or 3 eggs
- 1 cup rolled oats, dry
- 1 cup Greek Yogurt
- 2 teaspoons sugar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
Preparations:
- In a blender or use a hand held blender, blend all ingredients until smooth.
- Heat a non-stick skillet over medium-low heat. Spray with non-stick cooking spray or add some butter.
- Pour 1/4 cup of batter onto the skillet. Flip when they start to bubble. Cook until golden brown.
- Repeat with remaining batches, greasing the skillet as needed. Makes about 10 pancakes.
